For those who like their coffee mellow
Thanks to its thick filter, the Chemex produces mellow, highly aromatic coffee with a rounded flavour completely free from bitterness. The perfect coffee for tea lovers!
Size: coarse (between an electric coffee maker and French press grind size).
Quantity: between 7 and 10 g for each 100 ml of water, depending on the desired strength
Filtered or spring water, if possible. Do not use boiling water (90-95 °C).
HOW TO USE
1/ Place the filter in the Chemex. The filters are folded in four: open them out with one layer on one side and three layers on the other. Place the thickest side (with three layers) against the spout.
2/ Using a pour-over kettle, rinse and drain the filter. This preheats the Chemex® and removes any taste from the filter paper.
3/ Leave the filter in place and discard the water.
4/ Add the grounds and start brewing.
5/ Extraction step one: pour water slowly over the grounds in an even spiral from the centre to the edges, taking 30 to 45 seconds to saturate the coffee. At this stage, avoid pouring water directly onto the filter.
6/ Extraction step two: wait 15 seconds, then pour in the rest of the water, using the same method as above.
7/ Once extraction is complete, remove the filter and enjoy!
