This coffee from El Salvador was selected for its fine balance and fruity flavours in the cup. It comes from the “El Manzano” plantation, located in the foothills of the Santa Ana Volcano, where our coffee expert Diego worked in his youth.
Producer Emilio is the sixth generation of coffee growers in his family. Taking over management of the family farms, Emilio wanted to create a new and unique undertaking in El Salvador. By establishing the processing plant in the "El Manzano" farm, he now has one of the most beautiful production facilities in Central America. He is able to transform his coffees with great precision through differe...nt treatment methods and processes and always pursues the same goal: reach perfection !

El Salvador produces a coffee renowned for its quality, composed mainly of Bourbon, Pacas & Pacamara. The vast majority of Salvadoran coffee is grown in the shade and plays an important role in the fight against deforestation and soil erosion.
The Pacas variety is the result of a natural and spontaneous mutation of the Bourbon variety in El Salvador. It was discovered in the 1950s by Fernando Alberto Pacas Figueroa on a small plot of his Finca "San Rafael" in the Ilamatepec/Santa Ana Volcano region of El Salvador.
Don Fernando soon noticed that the production of his plot dedicated to this mysterious variety was far superior to that of other areas in San Rafael and that these plants had unique characteristics. Their main virtue was their small size, which allowed him to move the plants closer together to increase his farm's productivity.
Having played a determining role in the discovery of this variety, the plant took the name of Don Fernando: Pacas.
The Pacas variety performs well in a range of environments and is known for its robustness and its exceptional cup quality. It is popular in El Salvador and other countries.
