Carefully hand-picked and monsooned, the “Malabar India Bio” is a rare coffee. Exposed to the wet monsoon winds, it undergoes a unique process that affords it a particular spicy scent, reminiscent of pepper and utterly unparalleled.

This coffee is recognizable by the finesse and smoothness of its woody and malty flavours, its generous body, and its notes of dried fruit.

Terroir

Organically farmed and certified “Max Havelaar”, this pure origin coffee is cultivated by small producers, with great respect for nature and mankind, in the heart of a mountainous (1500m), isolated region in Kerala. Protected from sun and rain by a canopy of trees and plants, the coffee trees grow deep into the jungle amongst an astonishing variety of different species. Biodiversity serves to ...protect the exceptional quality of both the soil and the coffee.

A TOUCH OF HISTORY ?

Back when coffee was still transported by sail ship, a trip from southern India to Europe could take six months. Over the course of this long journey, the green coffee would swell and change colour from green to pale yellow. Stored deep within the ships’ holds, its exposure to the humid monsoon sea winds would trigger the coffee’s fermentation.
With the arrival of the modern era, travel times were shortened considerably and European consumers missed the distinctive scent. Today, this “monsooning” process is reproduced in the coastal regions of Malabar. During the monsoon season (between June and September), green coffee, spread out in open warehouses, is left to naturally absorb ambient humidity. Throughout this time, the beans are periodically raked, turned, and spread out again. Great care is taken to ensure uniform exposure to the winds and, in so doing, the distinctive aromas of the beans.

Our design is inspired by the "Holi" festival, sometimes called the "Festival of Colours." It is an ancestral Hindu tradition that celebrates fertility and the arrival of spring. Participants dress in white and throw coloured pigments at each other. Each pigment has its own meaning: red for love, green for harmony, orange for optimism and blue for vitality.
